Tis the Season - Peanut Brittle!

More treats...  the best ever

Assemble all your ingredients:
1-1/2 cups sugar
1 cup light corn syrup
1 pound raw spanish peanuts
3 Tablespoons butter
1 heaping teaspoon soda

Butter a large baking sheet and set aside.
In a saucepan, cook over medium-high heat until sugar dissolves:
1-1/2 c. sugar
1 c. light corn syrup

Stir in:  1 lb. raw spanish peanuts
Boil until mixture barely begins turning amber, stirring often.

Add:  3 T. butter
Quickly remove from heat, stirring until butter is melted.

 Stir in well:  1 heaping t. soda  (Grandma's tip)
Stir quickly to incorporate, but don't overstir.
Soda will aerate the brittle, making it light and crispy.

 Quickly pour onto large buttered baking sheet, letting it spread by itself

 Cool, snap into pieces and store...

 ...or serve, or give away, or hide in the sewing room to munch on....

  4. I used this recipe to make molasses brittle. I left out the peanuts and added molasses at the end of the cooking time. It was amazing. Thanks for sharing.
